This dish is so yummy! I used ground turkey in my homemade marinara sauce. The fresh basil and fresh parsley gives the ricotta a burst of flavor and a rich taste to it.
Yields: 4 Servings Prep Time: 30 Mins Cook Time: 45 Mins
Ingredients
1 lb turkey ground
1 box jumbo shells
1 handful fresh basil (chopped)
1 handful fresh parsley (chopped)
1 can tomato sauce
1 can diced tomatos
1/3 cup of vodka sauce
1 yellow onion (small diced)
2 cups ricotta cheese
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp sazon seasoning pkg
1 tsp red pepper flakes
1 cup mozzarella cheese
1 cup parmesan cheese
2 tbsp olive oil
Salt & pepper to taste
Instructions
Preheat oven to 350 degrees.
Boil water in pot on stove and add salt. When water comes to a boil, add pasta and cook to al dente about 12 to 14 minutes.
Rinse cooked shells under cold water and drain.
In a medium bowl mix ricotta cheese, basil, and parsley.
In a saucepan, add olive oil on medium heat. Add in onions and saute until cooked not burned.
Add your ground turkey to the pan and cook. Season with salt, pepper, onion powder, red pepper flakes and cook until meat is done.
Add in tomato sauce, chopped tomatoes, vodka sauce and stir to combine.
Pour 1 cup of meat sauce into your baking dish.
Fill each shell with one spoonful of filling, place in baking dish.
Pour remaining sauce over the shells and sprinkle on your cheeses.
Bake for 40 minutes until done (I like uncovered for a crunch on top).
Let stand for 5 minutes then enjoy!
